More adventures in Cat Lambic. Niels really outdid himself on the minimalist labeling on this one choosing to go with a small red R on the cork to indicate that this is a rhubarb lambic. Pours totally still with a young floral nose and somewhat grainy/cereal mouthfeel. It's extremely woody as well and reminiscent of De Troch lambic. I don't regularly eat rhubarb but have had the various Cantillon iterations a few times each and can definitely detect a similar taste profile from what I assume are the petioles... that or he used the leaves and I'm going to get really sick. Either way, as this opens up it takes on a more tart characteristic and is slightly reminiscent of apple juice. Really easy to drink all around.
