    Apple Pie ala Mode

    • 4 cups grain alcohol
    • 2.5 cups vanilla vodka
    • 4 apples
    • 1/2 gal apple juice
    • 1/2 gal apple cider
    • 1 cup packed brown sugar
    • 1 cup white sugar
    • shitload cinnamon sticks
    • half a shitload vanilla beans
    [IMG]

Mix sugars, juices, and 4 cinnamon sticks. Simmer for 20 min.

In the mean time slice apples into 1/4" slices and throw into bowl with alcohols. Let these soak while above simmers then cools to room temp.

Prep jars with soaked slices, 1 stick of cinnamon, and 1/2 a bean for every pint.

Apple Pie a la Mode (Michigan Style)

    2 gallons Apple Cider
    1.5 cups white sugar
    1.5 cups brown sugar
    6 cinnamon sticks
    6 whole cloves
    2 tsp Vanilla
1 liter Moonshine (or 151 proof Everclear)
    250 mL Bourbon

Method: combine all ingredients besides the alcohol. Bring to a boil and reduce by 25%. While it's boiling, remove the foam that floats to the top. Remove from heat and let cool to below 173*. Strain the cider through a fine mesh strainer. I've tried using a coffee filter but it clogs up too quickly. Add alcohol. Stir and jar! It's best after sitting for a few weeks!

    Limoncello

    SECRET RECIPE

The basic recipe is as follows:

    15-20 organic lemons (no wax)
    151 proof Everclear
    Vodka
    Simple syrup
    Orange blossom water

    Method:
Zest the lemons with a microplane. Add zest to Everclear and leave it for 4-6 months (shaking occasionally). After 4-6 months, add simple syrup, orange blossom water, and vodka. Filter 3-5 times trough a coffee filter to remove oils. Bottle and enjoy!

(Substituting the lemon for pineapple is awesome, too)

DEAL! I'll be doing batch two later this month when the cider is a little better. I'd be happy to do a swap.

Everclear is not moonshine you idiot sticks. Stop posting that shit. I know moonshine can be high proof spirits, but moonshine traditionally is whiskey, which is distilled with corn. IM FROM INDIANA. DON'T TALK TO ME ABOUT MOONSHINE. carry on

Well, I did a little research and it turns out that 95% everclear is indeed made from corn. I was under the impression that it was all just cereal grains. My apologies, sorry for the caps locks, please carry on.

After all my experiments, some were good, some were undrinkable, and some were great. Strawberry was my favorite, so I bottle it now.
