I use only fruit and pecan wood for. I let them go unwrapped for 3 hours. Then I mix some honey, parkay squeeze butter, brown sugar and more rub together. Cover both sides of the rack and wrap in foil. Smoke em for 2 more hours.
Unwrap and apply your preferred sauce on the ribs and put them on for one more hour. Finally, I put a little more sauce on then and let them go over direct heat for a couple minutes on each side. Take them off the heat and let them rest. Slice them up and eat.
